COPE Galway is a non-profit organization that helps combat food waste by collecting food surplus from grocery stores such as Tesco, Aldi, and Lidl that would otherwise go to the landfill.
Within 24 hours, the food they collect is given to individuals in need.
“When so many are going hungry, it just makes sense to bring surplus food to those who need it rather than adding the ‘waste’ food to our overflowing landfills,” says Mary Fitzgerald, a food rescue volunteer.
